Zucchini Tomato Pasta Sauce
By the end of August I usually have a lot of zucchini and tomatoes from the garden so I came up with this zucchini tomato pasta sauce and love it! It is a great way to use up those extra zucchinis and garden tomatoes. It has a fresh yummy taste that is great served over your favorite pasta or rice.
I think that I originally went to do a stir fry with the zucchini and tomatoes but got busy doing something else and forgot to get back and stir the pan and the tomatoes ended up being more of a sauce. So now I just cook it down so the tomatoes are exactly that. No regrets.
This recipe is quick to prep and cook up for a lunch or supper meal.
Zucchini Tomato Pasta Sauce Ingredients
- 3 cups diced zucchini
- 3 cups diced tomatoes
- 1/2 cup chopped onions
- 1 tbsp. minced garlic
- 2 tbsp. chopped fresh basil
- 2 tsp. Italian seasoning
- salt & pepper to taste
- olive oil
- Parmesan or mozzarella cheese
Zucchini Tomato Pasta Sauce Directions
- Heat pan or skillet and add some olive oil
- Add minced garlic and cook for 1 minute
- Add in the zucchini, tomatoes, onions and basil and cook down to desired consistency
- Season with salt, pepper and Greek seasoning to taste
- Spoon over your favorite pasta, rice or potato and top with grated cheese and enjoy!
